This is a tea that can be drunk today, or stored for your grandchildren to drink. A truly diverse range of flavors and aromas are possible with sheng puerh. When taking into account all variables such as growing region, tea tree varietal, tea tree age, terroir, individual skill in production, storage condition, and length of age it is hard to sum up in a single thought or idea what sheng puerh is.\u003c\/p\u003e\n\u003cp\u003eYoung sheng puerh is biologically very similar to modern green tea. It will present vegetal and fruity flavors and aromas. Often there are notes of wet hay or alfalfa. This is a tea that can present a face of bitterness and astringency that quickly escapes into a natural sweetness.\u003c\/p\u003e\n\u003cp\u003eAged sheng puerh is completely unique in the tea world. Time has had her way with this tea and it is better for it. This tea can give enhanced flavors and aromas. Often described as musty, like smelling an old book, this tea is a definite treat for the senses. This is used to describe the long history Yunnan (SouthWest China) has with puerh tea.\u003c\/p\u003e\n\u003cp\u003eChangtai is well known for the quality of their early 2000's puerh. Their master blenders created this blend from Menghai area Da Shu (Big Tree) puerh tea trees in 2003. It has been stored in hot, humid Xishuangbanna until this year. This blend is ungraded and contains both large leaves and tiny buds. The leaves are lighter in color than the similar \u003ca href=\"http:\/\/crimsonlotustea.com\/products\/2003-changtai-ji-nian-sheng-raw-tuo-cha-100g\" target=\"_blank\" title='Crimson Lotus Tea 2003 Changtai \"Ji Nian \/ Memorial\" Sheng \/ Raw Tuo Cha (100g)' rel=\"noopener noreferrer\"\u003e2003 Changtai \"Ji Nian \/ Memorial\" Sheng \/ Raw Tuo Cha\u003c\/a\u003e and seemingly contains more buds.\u003c\/p\u003e\n\u003cp\u003eThe aroma of the warming leaves is sweet with floral and thick honey notes. The liquor brews a medium darkness like an amber honey. There is a noticeable astringency with quick chaqi (tea energy). The flavor reminds Lamu of Tibetan Butter Tea, without the butter. Additional steeps bring out more astringency balanced with sweetness and a nice huigan (\u003cspan\u003e回甘 \"returning sweetness\" feeling in the throat) and a trace of mintiness. This is a very floral tea which is surprising given the age. The blenders who work for Changtai are true masters of their craft. The leaves in this puerh are a blend of 15 mountains, Spring picked in 2005. The name for this cake “Yun Pu Zhi Dian” means “Top of the Clouds”. Since Yunnan means “Southern Clouds” this name has a double meaning. We were told this material was used as a bribe to pay off a Lincang area official in 2006. This particular official has a keen palate for tea and won't accept low quality bribes. He had the maocha pressed himself and sold it to a friend of ours. Whether the story is true or not is for you to decide. We're excited to see what a little Seattle storage will do with this ourselves, but we've heard Xigui material is best drank in the first decade. It won't get much better with time. These are heavily compressed and difficult\/dangerous to open with a puerh knife. Also you will break more of the leaves that way. Leave the ball whole and let the water open it up naturally.\u003c\/p\u003e\n\u003cmeta charset=\"utf-8\"\u003e\n\u003cp\u003e\u003cspan style=\"line-height: 1.5;\"\u003ePut the entire ball in your gaiwan. Start by pouring boiling water right on the ball from a little height. Let that sit in the gaiwan for about half a minute. Then pour that out and let the ball sit in there alone for a couple minutes. Then poke the ball with the lid of the gaiwan to loosen it up a bit. Then do another sustained shower under the boiling water with 30 more seconds of steep time. That gets discarded again. Let the ball sit in the gaiwan for a few more minutes and then poke at it with the gaiwan lid again. It should be much softer now. Again pour boiling water slowly and directly onto the tea ball. This is your first official steepSteep for about bout 30s. Drink that steep and it's quite nice. Puerh has two main categories. There is the traditional puerh called Sheng or Raw puerh; this is largely unchanged for 1,500 years. Then you have Shou or Ripe\/Cooked puerh; this was created with methods discovered in the 1970's. Traditionally sheng puerh was allowed to age over the decades to become aged puerh. Shou puerh was created during the attempt to mimic what aged sheng puerh tasted like. Shou puerh starts as sheng puerh but is then allowed to undergo enhanced aging in a tightly controlled hot and humid environment. The original idea was to create aged sheng puerh without waiting decades, but what ultimately resulted is a new category of puerh.\u003c\/p\u003e\n\u003cp\u003eYoung sheng puerh, aged sheng puerh, and shou puerh makes up the triangle of modern day puerh. Young sheng puerh is often floral, fruity, bitter, and astringent with grassy notes of hay. It will brew light and clear and is biologically very similar to green tea. Over the years young sheng puerh will change. There is an active bacteriological fungal fermentation happening inside the leaf. Each year it changes in flavor and aroma.\u003c\/p\u003e\n\u003cp\u003eAged sheng puerh is thoroughly unique in the tea world. It is deep and memorable with a musty smoothness and earthiness reminiscent of walking through an old cathedral or opening an ancient book. It will brew thick and dark.\u003c\/p\u003e\n\u003cp\u003eShou puerh is very difficult to make. It takes multiple tons of sheng puerh leaf material and several months to do right. Without constant attention from experts it can create stinking garbage that smells of rotting fish or a muddy stagnant pond. Well crafted shou puerh however is a true delight. It will be earthy with strong mineral notes. It can smell like the forest after a rain. It will often have notes of mushroom or chocolate. It is delicious. Because shou puerh has undergone an artifically enhanced aging process there is less effect of aging it over time. No one there knows how long the trees have been there or anything about their history. When you ask locals the age they simply reply that they are as old as the earth itself.\u003c\/p\u003e\n\u003cp\u003eOn the north slope of a steep mountain ridge, surrounded by dense forest, these trees reach to the sky. The trees at 20-40 feet tall literally scrape the ceiling of the forest. Impressive does not begin to describe these ancient beings. A day's harvest for a young eager picker often maxes out around just 2kg of fresh leaf. We get as much as we can. We pressed less than 100 cakes this year. This is a very unique puerh. The flavor is strong, pure, natural, and quite bitter, but with a transcendent chaqi. The material itself is full bodied and thick in the mouth but soft in presentation. There is minimal bitterness and astringency, but if you push it you get a floral experience reminiscent of orchids. The overall character of this tea is on the savory and vegetal side but there is a wild essence that makes it interesting. The tea energy is impressive! This tea is sweet from the early steeps and has a lingering aftertaste. The middle steeps hits your palate like a dark wildflower honey. No one there knows how long the trees have been there or anything about their history. When you ask locals the age they simply reply that they are as old as the earth itself. In an attempt to conserve their strength for the ages these trees each produce precious few buds and new spring growth. A day's harvest for a young eager picker often maxes out around just 2kg of fresh leaf. We get as much as we can. This is a very unique puerh. The flavor is strong, pure, natural, and noticeably bitter, but with a transcendent chaqi. There is an aroma in the dry leaves that is reminiscent of wild blueberries. Wet aroma is honeysuckle and alfalfa. This is a tea that is hard to define. The aromas are both familiar and mysterious. Everything about this tea is distinct and individual. The profile is at times sharp and distinct. The energy is mentally energizing. We were really impressed with how much better the tea was this year. The tea last year was amazing but this year's harvest was exceptional! The material itself is full bodied and thick in the mouth but soft in presentation. It is smooth and swallows easy. There is minimal bitterness and astringency, but if you push it you get a floral experience reminiscent of orchids. The overall character of this tea borders on the savory and vegetal side but there is a wild essence that makes it interesting. The tea energy is impressive! This tea is sweet from the early steeps and has a lingering aftertaste. The middle steeps hits your palate like a dark wildflower honey. It's not easy to get out to this garden and everything they pick needs to be packed all the way back out for processing in town. This material was picked and processed only from a select few old trees in the Autumn of 2018. The trees are a blend of bitter and sweet varietals.
